Specs, glassware, method, garnish — brisk and confident. If cocktails aren't your background, say what you do know cold (pours, serves, wine by the glass) rather than bluffing.

A customer has clearly had too much but insists on another. Exactly what do you say and do?

You legally can't serve them — show you refuse without humiliating: quiet word, water offered, manager and door team looped in. Firm, kind, non-negotiable.

Someone who looks under 25 is in a round their mate is buying. Walk me through it.
